Garlic & Herb Shrimp Crostini


Ingredients

  • 1/3 cup olive oil
  • 8 oz canned shrimp
  • 1 teaspoon fresh garlic
  • 1 French bread baguette
  • 2 teaspoons fresh chopped basil
  • 8 oz cream cheese

Directions

  1. Preheat the oven to 200°. 
  2. Combine olive oil & garlic.
  3. Slice baguette.
  4. Place on baking sheet and drizzle with olive oil and garlic mixture. 
  5. Bake for 5-10 minutes or until lightly toasted.
  6. Mix shrimp with basil. 
  7. Spread cream cheese on bread and top with shrimp.

My Changes

  • The original recipe called to slice the baguette into 36 slices...I have no idea how in the world you could possibly get that many slices out of 1 baguette.  I got 12. 
  • I just drizzled the slices with olive oil and sprinkled with garlic powder...to be perfectly honest, I just didn't feel like chopping garlic that day.
  • I also chose to just place the shrimp on the slices and sprinkle with Italian seasoning.  Apparently I was lazy that day.
  • I think it would be nicer to use jumbo frozen shrimp (versus canned baby shrimp as suggested in this recipe).  But I appreciate when brands give out recipes and wanted to support them, at least the first time.
