Flourless Peanut Butter Cookies

Last night I had an intense craving for cookies.  One day I will be a billionaire because I will have delivery services for ice cream, cookies, and booze (really the safest way to prevent drunk driving).  Don't steal my idea- it's copyrighted!  So I was looking up peanut butter cookies because we have a ton of peanut butter & it seems to be one of the easier things to make at the last minute.


Ingredients

  • 1 cup peanut butter
  • 1 cup white sugar
  • 1 egg

Directions

  1. Preheat oven to 350 degrees F (180 degrees C).
  2. Combine ingredients and drop by teaspoonfuls on cookie sheet. Bake for 8 minutes. Let cool. Recipe doesn't make very many, so you could double recipe as you desire. 

My Tips 

  • I doubled the ingredients, because everyone in the reviews said the recipe didn't make much.  I think they lied, because this made a ton.
  • I took suggestions from the reviews and used 1/2 white sugar & 1/2 brown sugar as well as added vanilla.
  • These were horrible.  Really really awful.  I didn't bother trying to shape them because they were so gooey that they wouldn't hold shape anyway.  At 8 minutes they were definitely not done so I continued cooking the.  They somehow ended up being burnt yet some odd combination of both gooey and crumbly.  I have no idea how it happened.
  • Part of the problem may have been that I'm at a higher altitude (4500+).  Not sure if that could really be it, but seeing as how I grew up at sea level I tend to blame the altitude for everything.  It's a good excuse sometimes.
