Oatmeal Cookies

I want to start off my apologizing for the lack of new recipes on here.  I just realized when I logged in that I didn't add a single post to this blog for the entire month of April.  It was kind of a hectic month.  The husband's truck broke and it cost about 2x what we had expected to fix it.  Plus it's finals week this week, so the past month was short on both $$ (influencing grocery habits) and time (the ability to use those groceries in an interesting way).  But, school is almost out so I'll have more time in the kitchen after this week, plus hopefully more hours working to afford all the different groceries I want to try out.  Hubs also has a job now which will help out on the money issue as well as giving me more time alone & initiative to have yummy stuff waiting on him! 

Any who, now that we're done with that.  I just made some awesome cookies. And they're supposedly low-fat as well, so what's better than that?



Ingrediens

  • 1/4 cup brown sugar
  • 1/4 cup white sugar
  • 3/4 cup applesauce
  • 1 cup all purpose flower
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1 cup oats*
  • 1/2 cup raisins 
  • 1/2 cup nuts (optional)

Directions

  1. Pre-heat oven to 350.  Grease cookie sheet.
  2. Mix ingredients together in large bowl.  Stir/whisk until thoroughly mixed.
  3. Drop by spoonfuls onto cookie sheet
  4. Bake at 350 for 10-15 minutes.

My Changes

  • The original recipe calls for rolled oats.  I used quick oats because that's what I had.
  • I added about 3 teaspoons of peanut butter as well as a teaspoon of cocoa powder.
  • My cookies were just a tiny bit dry.  I left them in there for 15 minutes, because they didn't look done.  To be honest, I still don't think they look done but they are.  So this may have been my fault.  I also didn't have 3/4 cup of applesauce, more like 1/2, so that's another possible problem.
  • There is a little more cinnamon than I would have liked, but I had cinnamon applesauce so that's probably why.
  • Overall, they were really easy (especially since they were eggless) and pretty tasty.  The fact that they are lower fat than most cookies is also a plus.
